Tutto questo e altro ancora è la “Federazione Italiana Cuochi” (F.I.C.), unico ente di questa categoria che vanti sul territorio nazionale una diffusione e una rete associativa così capillare. Costituita nel 1978 da Associazioni aderenti (alcune delle quali avevano superato i 200 anni di fondazione ed erano nate in passato come confraternite, corporazioni o società di mutuo soccorso di “cucinieri”), ha ottenuto nel 2001 il “Riconoscimento Giuridico” come organismo atto costituire la rappresentanza, sul territorio nazionale, dei Cuochi e di coloro che si dedicano all’attività culinaria professionale, sostenendone lo sviluppo, la promozione e la formazione. La FIC, inoltre, è l'unica Associazione Cuochi in Italia a rappresentare di diritto la “World Association of Cooks Societies” (WACS), alla quale aderiscono più di 70 Federazioni Nazionali dei cinque continenti. Questi ed altri riconoscimenti consentono alla Federazione la presenza attiva nei più importanti “Saloni Culinari” del Mondo”, ad esempio: i “Campionati del Mondo di Lussemburgo”, le “Olimpiadi Culinarie di Erfurt”, lo “European Culinary Challege di Basilea” e nelle altre iniziative delle Nazioni aderenti alla Wacs. La collaborazione con enti governativi italiani o altre istituzioni le permette inoltre di avere una propria rappresentanza all’interno della “Commissione Enogastronomia del Ministero del Turismo” e di cooperare attivamente a molte iniziative istituzionali del Ministero della Salute e dell’Istruzione.
